摘要
以碎花生为主要原料,加入辣椒、脱水胡萝卜丁、花生粉、花椒、麻椒、香油、味精、盐、糖等,在油中加热制作花生碎蔬菜酱。正交试验结果表明:碎花生为100g,混合油为200g,胡萝卜为80g,辣椒为20g,和其余辅料配合制得花生碎蔬菜酱。与市场同类的产品比较,t检验分析:t=1.81<2.262(在5%显著水平相应的临界值),花生碎蔬菜酱和市场同类花生辣椒酱没有显著差异,可以被消费者所接受。
Chopped peanuts are used as the raw material,chopped peanuts vegetable sauce is prepared by adding chili,dehydrated carrot dices,peanut powder,pepper,sesame oil,monosodium glutamate,salt,sugar and so on into heating oil.The orthogonal test results show that chopped peanuts is 100 g,mixed oil is 200 g,carrot is 80 g,chili is 20 g,which are mixed with the other ingredients to prepare chopped peanuts vegetable sauce.Compared with the similar products in the market,T test analysis shows that t=1.81<2.262(at the 5%significant level corresponding threshold),and indicates that theres no significant difference between chopped peanuts vegetable sauce and similar peanut chili sauce in the market,and can be accepted by consumers.
