摘要
文章介绍了目前我国蜂蜜掺假检测现状,探讨了一种利用紫外光谱扫描快速鉴别掺假蜂蜜的方法。用紫外可见分光光度计对待检蜂蜜样品进行扫描,根据待检蜂蜜样品与糖浆、纯蜂蜜在210~400nm波长段的光谱图及光谱图中波峰波谷位置特征的不同,可快速鉴别待检蜂蜜是否掺假,同时该方法能识别蜂蜜质量,对鉴别蜂蜜品质有一定意义。
In this paper,the current situation of honey adulteration detection in China is introduced,and a method for identifying adulterated honey rapidly is discussed by UV spectra scanning.The honey samples are scanned with ultraviolet-visible spectrophotometer.According to the difference between the spectrograms of honey samples,syrup and pure honey in the wavelength range of 210~400 nm and the position characteristics of peaks and valleys in the spectrograms,it can quickly identify whether the honey is adulterated or not.At the same time,this method can identify the quality of honey,it has certain significance to identify the quality of honey.
