摘要
本研究调查了我国10个地区市售的小米中总硒含量情况,结果发现,市售的普通小米硒含量差异大,且总硒含量普遍不高。除此之外,概述小米的富硒技术、谷物中硒形态、代谢等,阐述因缺硒或摄入超量硒而导致的相关健康风险,提出小米及谷物作物硒研究中需要解决的问题,以期为高效利用谷物中的硒提供参考。
This study investigated the selenium content of marketed millet in 10 regions of China.It was found that selenium content of millet is very different,and the selenium content is generally not high.In addition,this article also reviewed selenium-enriched techniques of millet,selenium speciation and metabolism in grains;elucidates associated health disorders or risks due to the consumption of Se-deficient or Se-rich foods.Finally,we prospected the research and development of the seleniferous product of grains.
