摘要
作为衡量食品卫生质量的重要指标,食品微生物检验对于确保食品安全具有重要作用;控制好食品微生物学检验的各个环节,保证检验数据准确,对保障食品安全具有重要作用。本文对食品微生物相关概念及其在食品安全中的重要性进行了简述,对食品微生物检验的影响因素、检测技术和方法进行了分析探讨,对食品微生物检验质量控制环节及策略进行了研究,以期及时发现食品安全问题,避免问题食品流入市场对人们的身体健康造成影响。
As an important index,the detection of food microorganisms plays an important role in food safety.It is very important for food safety to control every link of inspection and ensure the accuracy of data.In this paper,the related concepts and its application to food safety are briefly introduced,the influencing factors,detection techniques and methods are analyzed and discussed,and the quality control links and strategies of food microbiological examination were studied,to find out the problem of food safety in time and avoid the influence of the problem food flowing into the market on people’s health.
