摘要
随着社会经济的发展,人们对美的追求越来越高,菜肴的造型摆盘日益受到烹调师的重视,其不但要求制作者精通烹调方法,还要求具有较高的艺术审美能力,掌握一定的文学及美术知识,从而满足人们味觉与视觉的享受。本文旨在研究造型摆盘在粤菜中存在的问题和改进的思路,并提出粤菜造型摆盘发展新方向。
With the development of social economy,people’s pursuit of beauty is getting higher and higher.Cookers pay more and more attention to the modeling of dishes.They not only require the producers to be proficient in cooking methods,but also have higher artistic aesthetic ability,master certain literature and art knowledge,so as to meet the enjoyment of people’s taste and vision.The purpose of this paper is to study the problems existing in the process of the application of the modeling dish in Guangdong cuisine and the improvement ideas,and put forward the new direction of the development of the plastic dish of Guangdong cuisine.
