不同保鲜膜气调保鲜技术对圣女果贮藏品质的影响 被引量:7

摘要 圣女果水分含量高,采后呼吸作用、蒸腾作用、后熟作用强,易导致营养损失、组织破坏,进而腐烂变质,严重影响圣女果的商品价值。为解决圣女果易腐烂、不耐贮藏、货架期短的问题,本试验研究了4种自制保鲜膜(PE保鲜膜、CK保鲜膜、材料1保鲜膜和材料2保鲜膜)对采后圣女果的保鲜效果,分析了不同保鲜膜处理对圣女果贮藏过程中5项关键指标(硬度、可溶性固形物、可滴定酸、抗坏血酸和感官品质)的影响。结果表明,添加有功能助剂ZnO和增链剂聚乙二醇、以聚对苯二甲酸-己二酸-丁二醇酯(PBAT)膜为原料的材料2保鲜膜对圣女果的气调保鲜效果最佳,圣女果经12 d贮藏后表现出最佳的硬度(5.49 kg/cm^2)、可溶性固形物(11.92%)、可滴定酸(0.59%)、抗坏血酸(12.21 mg/100 g)和感官品质(5.89分)。因此,采用材料2制备的保鲜膜在圣女果的保鲜应用中具有广阔的应用前景。 The moisture content of cherry tomato is high,and its respiration,transpiration and ripening are strong after harvested.It directly leads to the loss of nutrition,tissue destruction,and then rotten,which seriously affects its commercial value.In order to solve the problems of perishable,hard to storage and short shelf-life of cherry tomato,in this study,the effects of four kinds of self-made preservative films(PE preservative film,CK preservative film,material 1 preservative film and material 2 preservative film)on postharvest cherry tomatoes were analyzed.Five key indexes including hardness,soluble solids,titratable acid,ascorbic acid and sensory quality were analyzed during the storage of the fruits.Results showed that the material 2 film which adding ZnO and polyethylene glycol presented the best effect on the air-conditioned preservation of the cherry tomatoes.After storage for 12 days,the fruits packed with material 2 film showed the best of hardness(5.49 kg/cm^2),soluble solids(11.92%),titratable acid(0.59%),ascorbic acid(12.21 mg/100 g)and sensory quality(5.89).Therefore,the fresh-keeping film prepared by material 2 had a broad market application prospect in the fresh-keeping application of cherry tomato.
