摘要
本文就亚麻籽中木酚素积累的关键因素及其抗氧化性进行实验室研究。实验数据表明,木酚素积累和氨基酸、粗脂肪、酶活性成正相关,样品的氨基酸含量、酶活性和粗脂肪含量越高,相应的木酚素含量也越高。相同浓度的木酚素清除自由基能力强于VC,即木酚素的抗氧化能力强于VC,在清除自由基时,随着浓度的增加清除率增强,浓度达到150μg/mL时清除率达到最高,随后开始下降。
In this paper,the key factors of lignans accumulation in flaxseed and its antioxidant activity were studied in laboratory.The experimental data showed that the accumulation of lignans was positively correlated with amino acid,crude fat and enzyme activi-ty.The higher the content of amino acid,enzyme and crude fat,the higher the content of lignans was.The scavenging ability of lignans with the same concentration was stronger than that of VC,that is,the antioxidant ability of lignans was stronger than that of VC.When scavenging free radicals,the scavenging rate increased with the increase of concentration,and reached the highest when the concentra-tion reached 150ug/mL,and then began to decline.
