摘要 随着全球经济的不断发展,食品安全已经成为了全世界人民广泛关注的话题,社会上食物中毒的例子屡见不鲜,中毒来源包括食物本身成分的毒性与食物中携带的某些病菌,其中单核细胞增生性李斯特菌(单增李斯特菌)是最常见的食源性致病菌,该菌很早就引起了国家卫生安全部门的重视,但是由于该菌可广泛存在于多种食物当中,尤其是冷冻食品,俗称"冰箱菌",想要实现病菌的完全控制难度很大,为减少食物中毒的发生,需要对食物中的污染情况与检测方法进行有效的探讨和研究。 With the continuous development of global economy, food safety has become a topic of widespread concern for people all over the world. There are many examples of food poisoning in society. The sources of poisoning include the toxicity of food ingredients and some bacteria carried in food. Listeria monocytogenes is the most common food borne pathogen The bacteria has been paid attention to by the national health and safety department for a long time, but because it can be widely found in many kinds of food, especially in frozen food, commonly known as "refrigerator bacteria", it is very difficult to achieve complete control of the bacteria. In order to reduce the occurrence of food poisoning, it is necessary to carry out effective discussion and Research on the pollution situation and detection methods in food.
