饮料中合成色素赤藓红的快速检测 被引量:5

摘要 食品加工过程中添加的人工合成色素不仅不能提供营养物质,而且某些合成色素会危害人体健康,诱发中毒甚至癌症。赤藓红即是人工合成色素中的一种,常用于食品加工制品和饮料中,部分厂家为了改变产品外观,吸引消费者购买,滥用赤藓红色素。基于表面增强拉曼光谱(SERS)方法和便携式拉曼光谱仪,提出了一种赤藓红的现场快速筛查方法。该方法只需对疑似含有赤藓红的饮料进行简单的前处理,即可进行SERS检测。前处理和测试的总时长不超过15 min,检出限在0.5 mg/kg水平,有效满足现场快速检测的需要。 Synthetic pigments added during food processing provide hardly any nutrients,but certain synthetic pigments can harm human health,induce poisoning and even cancer.Erythrosine is one of the synthetic pigments,it is usually used in food processing products and drink.Some manufacturers abuse erythrosine to change the appearance of products and attract consumers to purchase.Based on the surface-enhanced Raman spectroscopy(SERS)and portable Raman spectrometer,we developed a rapid on-site screening method for erythrosine.This method only required a simple pretreatment of the beverage suspected of containing erythrosine,and then the SERS detection could be performed.The total duration of pre-processing and testing did not exceed 15 min,and the detected limit was 0.5 mg/kg,which could effectively meet the on-site law enforcement needs of government functional departments.
