摘要
人们对于食品行业历来有着很高的关注度,食品检测、食品安全等各方面都成为了企业和社会关注的焦点问题。随着检测技术的不断发展,傅里叶变换拉曼(Fourier transform Raman,FT-Raman)光谱技术作为一种能够快速、无损、准确的光谱分析方法,已经在农业、医学、考古学等领域证明了其价值,在食品行业也得到了越来越多的应用。各种研究报告表明,除了仅通过光谱的视觉差异信息进行物质判别之外,FT-Raman光谱结合化学计量工具或与其他光谱手段进行联合分析,提供了更多可以应用在食品行业的高效检测、判别手段。本文简述了有关FT-Raman光谱技术的一些基本原理,综述了近10年(2010~2019)中FT-Raman光谱在食品行业中的应用,并对其未来的发展趋势进行了展望。
People have always paid high attention to the food industry.Food testing,food safety and other aspects have become the focus of enterprise and society.With the continuous development of detection technology,as a fast,nondestructive and accurate spectral analysis method,FT-Raman spectroscopy has proved its value in agriculture,medicine,archaeology and other fields,and has played a more and more important role in the food industry.Various research reports show that,in addition to the material discrimination only through the visual difference information of the spectrum,FT-Raman spectroscopy combined with chemical metrology tools or other spectral means for joint analysis provides more efficient detection and discrimination means that can be applied in the food industry.This paper briefly introduced some basic principles of FT-Raman spectroscopy,summarized the application of FT-Raman spectroscopy in the food industry in recent ten years(2010~2019),and prospected its future development trend.
