摘要 通过对全国花椒主产区产品品质进行分析,为产品质量分级制定提供依据。收集代表性花椒样品124份,其中红花椒59份,青花椒65份,测定理化性状指标与感官指标。理化性状包括含水率、固有杂质、挥发油、不挥发性乙醚抽提物、总灰分含量等,对符合正态分布的数量性状用4个分点分为5级,1~5级出现的频率分别为10%、30%、30%、20%和10%。按照产品的理化性状指标与产品色泽、香味、整齐度等感官指标,分为特级、Ⅰ级、Ⅱ级和Ⅲ级。 Through analyzing the Chinese prickly ash grain peel product quality,provide a basis for product quality grading.124 representative prickly ash samples were collected,including 59 red prickly ash and 65 green prickly ash.Physical and chemical properties include water content,inherent impurities,volatile oil,non-volatile ether extract,total ash content,etc.Quantitative properties conforming to normal distribution were divided into 5 grades.The frequency of grades 1 to 5 was 10%,30%,30%,20%and 10%respectively.Combining the physical and chemical indexes with the sensory indexes such as color,fragrance and tidiness of the product,the grading standards of different grades were determined.Prickly ash products are divided into super grade,grade I,grade II and grade III.
