银合欢对山羊生长性能和肉质的影响

Effects of leucaena on growth performance and meat quality of goats

本研究旨在确定添加银合欢对山羊生长性能、肌肉pH和肉质的影响。试验选择36只4月龄的阉割山羊,根据体重随机分为2组,每组6个重复,每个重复3头羊。对照组饲喂苜蓿草,处理组每天补充200 g银合欢,试验60 d后对山羊进行屠宰,以分析肉品质。结果:银合欢组较苜蓿草组日增重、屠体重、胴体重和屠宰率分别显著提高144.19%、22.22%、34.29%和14.52%(P<0.05)。同时,银合欢组肌肉肉色黄度值较对照组显著提高129.55%(P<0.05),但银合欢组肌肉pH和蒸煮损失较对照组显著降低18.18%和18.45%(P<0.05)。综上所述,补充银合欢可以改善山羊的生长性能和肉品质。

The purpose of this study was to determine the effects of leucaena on growth performance,muscle pH,and meat quality in goats.Thirty-six 4-month-old castrated goats were randomly divided into two groups according to their weight.Each group had six repetitions,with three sheep per iteration.The control group was fed alfalfa,and the treatment group was supplemented with 200 g leucaena every day.The goats were slaughtered at 60 days after the experiment to analyze the meat quality.Results:compared with alfalfa group,the daily weight gain,slaughtering weight,carcass weight and slaughter rate of the leucaena group were significantly increased by 144.19%,22.22%,34.29%and 14.52%,respectively(P<0.05).At the same time,the muscle color yellowness value in the n alfalfa group was significantly increased by 129.55%compared with the control group(P<0.05),but the muscle pH value and cooking loss in the leucaena group were significantly decreased by 18.18%and 18.45%compared with the control group(P<0.05).Conclusion:supplementation of leucaena can improve the growth performance and meat quality of goats.
