紫苏籽粒粗脂肪、蛋白质及可溶性糖含量的测定及评价 被引量:8

摘要 利用索氏抽提法、凯氏定氮法及蒽酮比色法对来自不同产地52份紫苏籽粒粗脂肪、蛋白质及可溶性糖含量进行测定与分析。结果表明:紫苏籽粒粗脂肪含量在35.06%~53.28%之间,平均为45.09%;蛋白质含量在17.44%~33.66%之间,平均为25.46%;可溶性糖含量变化范围为1.79%~3.57%,平均值为2.65%。不同产地紫苏籽粒粗脂肪、蛋白质和可溶性糖含量存在一定差异,来源于金沙县的紫苏籽粒中粗脂肪含量最高,其后依次为纳雍县、黔西县、大方县、织金县、赫章县、七星关区,以威宁县紫苏含量最低。蛋白质含量排序为赫章县>七星关区>纳雍县>大方县>黔西县>织金县>威宁县>金沙县,但相互间的差异不显著。可溶性糖含量以来自七星关区的紫苏最高,其后依次为赫章县、金沙县、大方县、威宁县、黔西县、织金县和纳雍县。相关分析发现,紫苏籽粒蛋白质与粗脂肪和可溶性糖含量以及粗脂肪和可溶性糖含量间均为高度正相关,且均达到极显著水平。 52 accessions of Perilla frutescens(L.)Britton from different production areas were studied by using soxhlet extraction method,kjedahl method and anthrone colorimetric method. The results showed that the crude fat,the protein and the soluble sugar content of 52 accessions of Perilla frutescens(L.)Britton ranged from35.06 % to 53.28 %,17.44 % to 33.66 % and 1.79 % to 3.57 % with an average of 45.09 %,25.46 % and 2.65 %,respectively. There was difference among Perilla frutescens(L.)Britton from different production areas. There was the highest content of crude fat from seeds of Perilla frutescens(L.)Britton of Jinsha County,the following was Nayong County,Qianxi County,Dafang County,Zhijin County,Hezhang County and Qixingguan District,while the Perilla frutescens(L.)Britton from Weining County had the lowest content of crude fat. The order of the protein content was Hezhang County>Qixingguan District>Nayong County>Dafang County>Qianxi County>Zhijin County >Weining County >Jinsha County,but the difference among them was not significant. There was the highest content of soluble sugar from seeds of Perilla frutescens(L.)Britton of Qixingguan District,the following was Hezhang County,Jinsha County,Dafang County,Weining County,Qianxi County,Zhijin County and Nayong County. The correlation analysis showed that the protein content and the crude fat content,the protein content and the soluble sugar as well as the crude fat content and the soluble sugar in Perilla frutescens(L.)Britton seeds were highly positive correlated,reaching extremely significant levels.
