摘要 为了明确发酵酒与蒸馏酒在人体内的代谢速度,以典型啤酒、葡萄酒以及白酒为对象,以餐桌饮食为背景,利用呼气式酒精检测仪,对饮后人群进行跟踪检测。结果表明全部志愿者的平均代谢速度呈现出白酒>红酒>啤酒,以啤酒代谢速度为参照,红酒和白酒的代谢在饮酒2h后分别高出42.22%和77.78%,在饮酒4h后分别高出15.49%和31.16%;从性别上看,男性的2h、4h平均代谢率均高于女性;从年龄上看,人体在一定范围内对各酒种的代谢速度与年龄呈正相关关系。 In order to determine the metabolism speed of fermented wine and distilled baijiu in human body,this paper takes typical beer,wine and baijiu as the object,takes traditional table meal as the background,and uses breath alcohol drinkers to track and detect the people after drinking.The results showed that the average metabolic speed of all the volunteers was baijiu>red wine>beer.According to the metabolic speed of beer,the metabolic speeds of red wine and baijiu were 42.22%and 77.78%higher than that of beer after 2 hours of drinking;the metabolic speeds of red wine and baijiu were 15.49%and 31.16%higher than that of beer after 4 hours of drinking;the average metabolic speed of 2 hours and 4 hours of men was higher than that of women;the average metabolic speeds of 2 hours and 4 hours of men were higher than that of women,and in a certain range there was a positive correlation between the metabolism speed of each alcohol drink and age.
