不同容器贮存的凤香型白酒中金属元素的测定

Determination of Metal Elements in Fengxiang Baijiu Storage in Different Vessels

利用ICP-MS对经三种不同容器贮存凤香型白酒中的金属元素进行测定,定量了24种金属元素,酒海贮存后的酒样中Na(钠)、K(钾)、Mg(镁)、Sr(锶)、Se(硒)、Mn(锰)、P(磷)含量较高,而陶坛贮存后的酒样中Fe(铁)、Ni(镍)、Cu(铜)、Zn(锌)、Cr(铬)、Mn(锰)、P(磷)元素含量较高,不锈钢罐贮存酒样中各元素含量均较低。同时三类酒样的感官有着明显的差别,说明贮存容器对酒体老熟过程中感官的变化方向具有决定性的作用,酒海贮存是形成凤香型白酒风格特点的关键。

The contents of 24 kinds of metal elements in Fengxiang Baijiu storage in different vessels were detected.Results showed that liquor storage in Jiuhai has higer content of Na,K,Mg,Sr,Se,Mn,P element,liquor storage in pottery jars has higer content of Fe,Ni,Cu,Zn,Cr,Mn,P element,elements content in liquor storage in stainless vessels are lower.At the same time,there are obvious differences in the senses of the three types of liquor,which indicates that the storage vessels plays a decisive role in the change direction of the senses during the aging process of liquor,and the Jiuhai storage is the key to the formation of the flavor characteristics of fengxiang liquor.
