摘要
我国绝大多数优质白酒都是选用高粱做原料。但是大量储存高粱,可能出现陈化腐败,同时为了防止在高粱进厂时已经是陈化粮,我们需要建立高粱的陈化检验指标,而判断粮食是否陈化的重要指标就是脂肪酸值。此次研究以四家供应商高粱为原料,运用了滴定法进行实验,得出高粱陈化指标脂肪酸值内控标准。
Sorghum is used as raw material for most excellent liquor in China.However,when sorghum is stored in large quantities,aging corruption may occur.At the same time,in order to prevent sorghum from being aged grain when it comes to factory,we need to establish aging test index of sorghum,and fatty acid value is an important index to judge whether sorghum is aged or not.In this study,four suppliers of sorghum were used as raw materials,titration was used to carry out experiments,and the internal control standard of fatty acid value of sorghum aging index was obtained.
