摘要
食用菌被采摘后的呼吸作用会影响其生理生化过程,也影响着食用菌的抗腐性和储存性。现代物流作为新兴的运输方式,能够有效确保食用菌在运输过程中新鲜度,防止腐烂发生。针对食用菌现代物流保鲜发展现状,对低温保鲜、气调贮藏保鲜、辐射保鲜、化学保鲜、防雾薄膜保鲜、纳米薄膜保鲜等保鲜方法进行分析,探究适合于不同食用菌低成本、保鲜效果好的保鲜方法。
After being picked,the assimilation of edible fungi ceased.However,respiration has an influence on the physiological and biochemical processes of edible fungi,which also affects the spoilage resistance and storage of edible fungi.As an emerging transportation mode,modern logistics can effectively ensure the freshness of edible fungi in the transportation process,and prevent the occurrence of lesions and decay of edible fungi.This paper would analyze and ex plore the preservation methods of low temperature preservation,gas regulation storage preservation,radiation preservation,chemical preservation,anti-fog film preservation and nano film preservation according to the development status of modern logistics.
