天然食用色素的稳定性研究及在再造烟叶中的应用 被引量:2

摘要 如何提高再造烟叶与天然复烤烟叶的色泽逼真度,提升香气,制约其生产应用和推广。本文以色差为评价指标,考察光照、pH值和温度对复配天然色素稳定性的影响,以及维生素C、异抗坏血酸钠、茶多酚、苹果酸等护色剂对天然食用色素的护色效果,并探讨了护色剂对改良再造烟叶的色彩保护效果。结果表明,光照是影响色素稳定性的最主要因素,1.5mg/g茶多酚对复配色素的护色效果较好;在黑暗避光、自然光照和强光(13000lx)条件下,添加茶多酚的再造烟叶色差较未添加对照组,分别降低了14.26%、27.58%和26.30%。黑暗避光条件下,放置30天后添加茶多酚的改良再造烟叶色差为3.89,色泽稳定性较好。再造烟叶中添加适量天然食用色素和护色剂有利于提高其品质和色泽稳定性。 How to improve the color fidelity of recycled tobacco leaf and natural cured tobacco,improving the aroma,restricts its production,application and promotion.In this paper,the color difference is used as the evaluation index,and the effects of light,pH and temperature on the stability of mixed natural pigment were investigated.The effect of color protection,such as vitamin C,sodium isoascorbate,tea polyphenols and malic acid on natural food pigment was studied.In addition,the protecting effect of color protection on recycled tobacco leaf also was been discussed.The results showed that the light was the main factor on affecting the stability of pigment;1.5 mg/g tea polyphenols have the best color protective effect on complex pigment solution.Under dark conditions of protection from light,natural light and highlight(13000 lx),compared with the control group,the color difference of the reconstituted tobacco leaves was reduced by 14.26%,27.58%and 26.30%,respectively.Under dark conditions,the color difference of modified and regenerated tobacco leaves was 3.89 after 30 days,indicating good color stability.It is beneficial to improve the quality and color stability of reconstituted tobacco by adding natural food pigment and color protectors.
