摘要 黄秋葵(Abelmoschus esculentus)具有极高的营养价值,其含有的黏液多糖可用于食品添加剂、血浆替代品和血容量扩充剂等;黏液多糖通过结合胆固醇和胆汁酸,有助于有害物质转入肝脏代谢。黄秋葵种子含油量在20%~40%,亚油酸含量高达47.4%,是一种潜在的油料。秋葵籽富含必需氨基酸和纤维,其可溶性纤维有助于降低血清胆固醇和心脏病的风险,不可溶性纤维有助于保持肠道健康。黄秋葵富含酚类化合物、黄酮醇衍生物、儿茶素低聚物和羟肉桂酸衍生物等生物活性物质,对一些重要的疾病,如心血管疾病、Ⅱ型糖尿病、消化系统疾病等具有很好的防治效果。 Okra have a powerhouse of valuable nutrients,the mucilage were used as food additives and plasma replacement or blood volume expander.The mucilage of okra binds cholesterol and bile acid carrying toxins dumped into it by the liver.Okra seeds are a potential source of oil,with concentrations varying from 20%to 40%,which consists of linoleic acid up to 47.4%.Okra seed is known to be rich in high quality protein especially with regards to its content of essential amino acids,the soluble fiber help to lower serum cholesterol,reducing the risk of heart diseases.The other fraction of okra is insoluble fiber,which helps to keep the intestinal tract healthy.Okra is rich in phenolic compounds with important biological properties like quartering and flavonol derivatives,catechin oligomers and hydroxycinnamic derivatives,which have potential benefts effects on some of the important human diseases like cardiovascular disease,typeⅡdiabete,digestive disease.
