摘要 在中国传统的食馔体系中,蒸制食品可谓独具风格,传承历史悠久,而且普及面极其广泛。湖南浏阳蒸菜被誉为我国"三大蒸菜之乡"之一。蒸制菜肴,从现代营养科学来看,所蕴涵的营养保健原理与营养学优势,为其他菜肴类别所不及。浏阳蒸菜对于现代人们的饮食保健、营养健康,具有重要的现实意义。 In the traditional food preparation system of China,steaming has its unique style while having a long historical standing and extremely extensive popularity.Liuyang of Hunan Province,the hometown of steamed dishes,is honored as one of the"Three Hometowns of Steamed Dishes",enjoys equal popularity with Tianmen of Hubei Province and Changshu of Jiangsu Province and has won good reputation both at home and abroad.From the viewing point of modern nutritional science,steamed dish implies health principles and advantages that dishes cooked in other ways are far behind.It has a vital practical significance to the diet,health and nutrition of modern people.
