麻布辅助封窖在酱香型习酒中的应用研究 被引量:6

摘要 传统酱香型白酒封窖方式工作效率低下,固体生产垃圾多,且存在诸多不利基酒质量因素。通过创新性的在封窖过程中增加麻布隔离后,能减少腐殖质进入封窖泥中,增加封窖泥的循环利用次数,并将固体生产垃圾量降为原来的4.8%。同时简化了开窖工序,提升开窖生产效率4倍,有效减少基酒中的泥味和霉味,进而提升大回酒轮次优质品率4.76%,为企业带来巨大的经济效益和社会效益。 The traditional pit sealing method in Jiangxiang Baijiu production has the disadvantages of low working efficiency, large production amount of solid waste and many other factors that have negative effects on liquor quality. Through adding sackcloth for separation in the pit sealing process, the humus entering the pit-sealing mud has been reduced, the recycling times of the pit-sealing mud has been increased, and the amount of solid waste has been reduced to 4.8 %. Meanwhile, the new technology has simplified the pit opening process, has improved the production efficiency of pit opening by 4 times, and has effectively reduced the muddy taste and musty taste of the base liquor, thus improving the high quality rate of the big production cycle by 4.76 %. The new technology has brought huge economic and social benefits to the enterprise.
