摘要
中国水产品具有产量大,种类丰富等特点,但目前针对加州鲈(Micropterus salmoides)的质量安全检测研究较少,因此针对影响加州鲈质量安全的众多复杂因素及风险防控欠缺的现状,评价影响加州鲈食品安全的风险因素,有助于建立加州鲈安全防控模式。本文以加州鲈的质量安全作为研究对象,通过对加州鲈养殖、运输等阶段可能产生的风险事件的识别,建立加州鲈质量风险评估体系。首先,介绍了加州鲈质量安全研究的重要性;其次,分析了种苗质量、药物、养殖环境和流通条件等影响加州鲈质量安全的风险因素;最后,总结了加州鲈质量安全的现状及问题,并提出了提高加州鲈质量安全、降低风险的建议对策。本研究旨在促进加州鲈产业的高质量发展,研究结果有助于完善中国水产品的系统监测及评估体系。
Chinese aquatic products are characterized by large output and rich species,but there are few studies on the quality and safety inspection of Micropterus salmoides.Therefore,strengthening the quality supervision of Micropterus salmoides will help to improve the prevention and control system of Chinese aquatic products.In view of the complex factors affecting the quality and safety of Micropterus salmoides as well as the lack of risk prevention,this paper evaluates the risk factors affecting the food safety of Micropterus salmoides,analyzes the circulation process and recognizes the potential risk events in cultivation and transportation,which is conducive to the in-depth discussion of the safety prevention mode of Micropterus salmoides.First of all,the importance of the research on the quality and safety of Micropterus salmoides was introduced.Secondly,the risk factors affecting the quality and safety of Micropterus salmoides were analyzed,such as the quality of seedlings,drugs,culture environment and circulation conditions.Finally,the status and problems of the quality and safety of Micropterus salmoides were summarized,and the countermeasures to improve the quality and safety of Micropterus salmoides as well as reduce the risk were put forward.The purpose of this study is to promote the high-quality development of Micropterus salmoides and improve the quality and safety evaluation system of aquatic products in China.
