摘要 【目的】为探究醇化过程中片烟常规化学成分及致香前体物质与感官质量之间的关系,为卷烟配方专家及仓库管理人员快速掌握库内片烟醇化质量状况提供理论支持。【方法】对2014年入库的湖南、贵州、福建、云南、河南、巴西等8个产地、等级片烟进行醇化过程跟踪取样,进行主要化学成分检测及感官质量评价,通过相关、主成分、回归等多种分析手段构建醇化片烟感官质量总分的预测模型。【结果】以吸光值、pH值、绿原酸、芸香苷、总植物碱、总糖含量6个主要化学成分指标构建了醇化片烟感官质量预测模型,模拟值与实际感官质量总分之间相差0.04~4.61分,误差在0.05%~6.94%范围,平均误差为2.40%,预测模型对上部醇化片烟的拟合效果略优于中部烟叶。【结论】基于主要化学成分构建的醇化片烟感官质量预测模型具有较高的精确度。 【Objective】The present paper aimed to explore the relationship between the general chemical composition and aroma precursors and sensory quality of tobacco strips during aging,and to provide theoretical support for experts in cigarette blending and warehouse managers to quickly grasp the sensory quality.【Method】Tobacco strips produced by areas like Hunan,Guizhou,Fujian,Yunnan,Henan,Brazil were collected in 2014.The main chemical components and sensory quality of samples were detected.The prediction model of total score of sensory quality of alcoholization leaves was constructed by correlation analysis,principal component analysis and regression analysis.【Result】The prediction model was constructed based on six chemical components including absorbance value,pH value,chlorogenic acid,rutin,total alkaloids and total sugar content.The error between simulated and actual value was in the range of 0.04-4.61 points,the error was 0.05%-6.94%,and average error was 2.40%.The prediction model was applied to the upper tobacco leaves than that of middle ones.【Conclusion】The model can accurately predict the sensory quality through the main chemical composition of tobacco strips during aging.
