摘要
陕西科技大学食品添加剂教学历经23年的发展,授课教师团队已编写食品添加剂教材4部,参与国家食品安全标准跟踪评价6项,制定地方标准12项,参与制定食品安全企业标准1000多项,服务企业超过1000家。该团队将丰富的食品添加剂实践经验,应用于“食品添加剂”教学中。将服务企业过程中遇到的实际问题,作为案例在课堂教学中解读食品添加剂相关法规;并引导学生以学习小组形式进行课外分组学习,并在课堂上进行口头汇报等。案例教学法主要解决了因食品添加剂种类多且规定复杂,学生难以记忆和理解的问题;学生被动学习,兴趣和效果欠佳的问题;课程考核方式单一的问题等。
After 23 years of development,the teaching team of Food Additives in Shaanxi University of Science and Technology has compiled 4 teaching materials for Food Additives course,participated in the follow-up evaluation of 6 national food safety standards,formulated 12 local standards,participated in the formulation of more than 1,000 enterprise standards,and served more than 1,000 enterprises.The team applied rich practical experience of food additives to the teaching of Food Additives.The practical problems encountered in the course of serving enterprises are used as cases in classroom teaching,and students are guided to study after class in the form of study groups,and to report orally in class.Case-based teaching mainly solves the problems that are difficult for students to remember and understand due to the variety and complexity of food additives.The problems of students'passive learning,low interest and poor teaching effect,and the single way of assessment are also solved.
