摘要 目的比较不同溶剂对石榴籽提取物抗氧化活性的影响。方法以石榴籽为原料,利用微切助互作技术粉碎,以蒸馏水和体积分数为95%的乙醇为溶剂,进行热水浸提,以抗坏血酸(vitamin C,VC)作阳性对照,比较各提取物的DPPH·,·OH和O2^-·清除能力以及抗脂质过氧化能力。结果石榴籽醇提物的抗氧化活性均比石榴籽水提物的高,VC的DPPH·和·OH清除能力均比石榴籽醇提物以及水提物的高,石榴籽醇提物和水提物对抗脂质过氧化能力以及O2^-·清除能力比VC的高。结论微切助石榴籽粉醇提物具有良好的抗氧化活性,这为石榴籽的应用以及后续产品开发提供了理论依据。 Objective To compare effects of different solvents on antioxidant activities of pomegranate seed extracts.Methods Using pomegranate seed as raw material,using press-shear assisted interaction technology to crush,using distilled water and 95%ethanol as solvent,extracting in hot water and using VC as positive control,the DPPH·,·OH,O2^-·scavenging ability and anti-lipid peroxidation ability of the extracts were compared.Results The antioxidant activity of pomegranate seed alcohol extract was higher than that of pomegranate seed water extract.The DPPH·and·OH scavenging capacity of VC was higher than that of pomegranate seed alcohol extract and water extract.The anti-lipid peroxidation ability and O2^-·scavenging ability of pomegranate seed alcohol extract and water extract were higher than that of VC.Conclusion The alcohol extract of micro press-shear assisted pomegranate seed powder has good antioxidant activity,which provided theoretical basis for the application of pomegranate seed and the development of subsequent products.
