我国不同地区产苦荞麦营养成分分析 被引量:19

摘要 选取我国5个主要产区的苦荞麦作为研究对象,分析了其中的蛋白质、粗脂肪、淀粉、膳食纤维及总黄酮含量,采用高效液相法测定了其中的芦丁和槲皮素含量。结果表明:选取的苦荞麦蛋白质质量分数为8%~12%;粗脂肪质量分数为2.3%~3.5%;淀粉质量分数为70%~80%;总膳食纤维质量分数为3.64%~10.2%,且膳食纤维组成以不溶性膳食纤维为主;芦丁含量为8.57~14.59 mg/g;槲皮素含量低于0.1 mg/g;总黄酮含量为11.32~16.32 mg/g。不同产区的苦荞麦,其主要营养成分含量差异较大,在选择和使用上应根据需求选择适合的苦荞麦。 The contents of protein,crude fat,starch,dietary fiber and total flavonoids of Tartary buckwheat from 5 major producing areas in China were analyzed,and the contents of rutin and quercetin were determined by HPLC.The results showed that the protein content of selected Tartary buckwheat was between 8%-12%;the crude fat content was between 2.3%to 3.5%;the starch content was between 70%to 80%;and the total dietary fiber content was between 3.64%to 10.2%.The dietary fiber composition was dominated by insoluble dietary fiber.The results of HPLC showed that the content of rutin in Tartary buckwheat was 8.57-14.59 mg/g(dw);the content of quercetin was less than 0.1 mg/g(dw).The total flavonoid content is between 11.32-16.32 mg/g(dw).The experimental results showed that the content of main nutrients in Tartary buckwheat in different producing areas was quite different,we should choose suitable Tartary buckwheat according to the demand.This study will provide a theoretical basis for the selection of Tartary buckwheat in food processing.
