摘要
以大豆为原料,研究食品添加剂海藻酸钠、焦磷酸钠、羧甲基纤维素钠(CMC)提高腐竹产率的最佳配比。通过单因素试验、响应面分析法对添加剂的配比进行优化,得到添加剂的最佳配比为海藻酸钠添加量1.0%(以干豆质量计,下同)、焦磷酸钠添加量0.07%、CMC添加量0.28%,在此条件下腐竹的产率为28.82%。
With soybean as raw material, the optimum proportion of sodium alginate, sodium pyrophosphate and CMC to improve the yield of yuba was studied. Through single factor experiment and response surface methodology, the optimal ratio of food additives was obtained as follows: sodium alginate 1.0 %(based on the mass of dried beans, the same below), sodium pyrophosphate 0.07 % and CMC 0.28 %. Under this condition, the yield of beancurd bamboo was 28.82 %.
