内蒙古自治区地方特色食品炒米的污染情况调查

Investigation on pollution of local characteristic food-fried rice in Inner Mongolia Autonomous Region

摘要 目的分析内蒙古自治区地方特色食品炒米中铅、总砷和总汞等9项污染指标的污染情况,为规范内蒙古自治区炒米卫生,控制食品污染提供参考依据。方法采用国标方法,2018年对内蒙古自治区7个盟市的13家炒米生产企业的52份炒米中铅、总砷和总汞等9项指标进行分析,其中质量指标水分1项,污染物指标铅、总砷、总汞、镉、铬、苯并[a]芘6项,真菌毒素黄曲霉毒素B1、赭曲霉毒素A 2项。结果7个盟市13家炒米生产企业52份炒米样品中镉检出率为100%,铅检出率为7.7%,黄曲霉毒素B1检出率为3.8%,赭曲霉毒素A检出率为5.8%,水分含量为0.87~5.67 g/100 g,其余4项含量小于检出限。结论内蒙古自治区地方特色食品炒米中铅、总砷和总汞等9项污染指标中有5个项目有检出。应引起相关部门重视,尽快发布实施食品安全地方标准。 Objective To analyze the levels of nine pollution indicators,such as lead,total arsenic and total mercury,in local characteristic food-fried rice in Inner Mongolia Autonomous Region,provide reference for standardizing the fried rice and controlling food pollution in Inner Mongolia Autonomous Region.Methods Using national standard method,the levels of nine pollution indicators in 52 samples of fried rice from 13 production enterprises in seven cities of Inner Mongolia Autonomous Region in 2018,including one of water indicator,six pollutant indicators of lead,total arsenic,total mercury,cadmium,chromium,and benzo[a]pyrene,two mycotoxin indicators of aflatoxin B1 and ochratoxin.Results In 52 samples of fried rice from 13 production enterprises in seven cities,the detection rate of cadmium,lead,aflatoxin B1,ochratoxin A was 100%,7.7%,3.8%and 5.8%,respectively.The moisture content was 0.87-5.67 g/100 g,and the contents of other four indicators were less than the detection limits.Conclusion Among nine pollution indicators in local characteristic food-fried rice in Inner Mongolia Autonomous Region,five indicators are detected,which should cause the relevant departments attention,to release and implement local food safety standards as soon as possible.
