摘要
民国时期,张通之撰写的《白门食谱》从南京本土文化出发,记录了当时城郊多地的特产原料与市肆店铺的美味佳肴,所介绍的食物名目材料是南京普通民众都可获得的,提供的菜品大多以中小餐馆的为主,许多品种一直流传至今,为当地人民所钟爱。
Baimen Recipe,written by Zhang Tongzhi during the period of Republic of China,recorded many kinds of specialties,raw materials and delicious foods sold in stores both in downtown and suburbs of Nanjing.As many ingredients listed on this book are available to ordinary citizens,and most of the dishes are provided by small and medium-sized restaurants,a lot of them have been passed down to this day and are still loved by local people.
