摘要
乙烯是植物内源激素,作为信号分子对植物氨基酸、脂肪酸、酚类、糖类等物质代谢起调控作用。当植物受到如水分、温度、机械损伤等胁迫时,以甲硫氨酸为前体物质,诱导乙烯合成。文章对近年来乙烯对植物物质代谢的调控作用进行了综述。乙烯主要通过影响相关代谢中关键酶来实现对物质代谢的调控。最后,对乙烯在茶叶加工过程中可能产生的调控作用和应用前景进行了展望。
Ethylene is a plant endogenous hormone that acts as a signaling molecule to regulate the metabolism of plant amino acids,fatty acids,phenols,sugars and other substances.When plants are subjected to stress such as water stress,temperature stress,mechanical damage,etc.,methionine is used as a precursor to induce ethylene synthesis.In this paper,the regulation of ethylene on plant material metabolism has been reviewed in recent years.Ethylene mainly regulates the metabolism of substances by affecting key enzyme activities in related metabolism.Finally,the possible regulation and application prospects of ethylene in tea processing are prospected.
