大麦魔芋益生固体饮料的研制 被引量:3

摘要 为开发一种可提供饱腹感、改善肠道环境、缓解便秘、健康减肥等功效的新型固体饮料,从日常食材中筛选具有调理肠道、降脂减肥等功能的魔芋精粉和大麦嫩苗粉为主要原料,白芸豆粉、抗性糊精、低聚果糖为辅料,通过单因素试验、正交试验进行配方优化。获得最佳配方:以大麦嫩苗粉和魔芋精粉配比为9:11形成基料,辅料为(按基料的百分比)白芸豆粉38%、抗性糊精28%、低聚果糖22%。经检测机构测定结果表明:产品的营养成分含量为蛋白质7.21%、脂肪1.1%、碳水化合物84.8%,根据相关资料估算,产品的能量值为594 kJ/100 g。该产品口感顺滑细腻、味道甘甜,不仅能量值低,而且可有效促进双歧杆菌的生长,对于需改善肠道、控制体质量、减肥及"三高"等人群具有很大的帮助。 In order to develop a new type of solid drink that can provide satiety,improve the intestinal environment,relieve constipation,health and weight loss.The raw materials with functions of regulating intestines,lowering fat and reducing weight were screened from daily food materials.The main raw materials were konjac powder and barley seedling powder,white kidney bean powder,dextrin resistance and oligosaccharide as auxiliary materials,and the formula was tested by single factor test and orthogonal test.The best formula was:the ratio of barley seedling powder and konjac powder was 9:11 to form the base material,the excipients were(according to the percentage of the base material)white kidney bean powder was 38%,dextrin resistance 28%,oligosaccharide 22%.The results from the testing institution showed that the nutrient content of the product was 7.21%protein,1.1%fat and 84.8%carbohydrate.According to the relevant data,the energy value of the product was about 594 kJ/100 g.This product is smooth and delicate in taste and sweet in taste.It not only has a low energy value,but also can effectively promote the growth of Bifidobacteria.It is of great help to people who need to improve their intestines,control their weight,lose weight and"Three-highs".
