锦江河2种野生食用经济鱼不同器官与肌肉组织中重金属的分布特征及安全性评价 被引量:1

Distribution and Safety Evaluation of Heavy Metals in Different Organs and Muscle Tissues for Two Wild Edible Economic Fishes in Jinjiang River

摘要 为了解锦江河野生食用经济鱼体不同组织的重金属分布特征以及污染状况和食用安全,利用原子吸收分光光度法(AAS)分别测定锦江河野生鲤鱼、翘嘴鲌肌肉、肝脏和卵中的Cu、Pb、Cr、Mn、Cd、Zn6种重金属的含量,并在此基础上开展了重金属的分布特征分析以及重金属污染和安全性评价。结果表明:6种重金属含量在2种鱼肌肉中的差异不显著,Zn含量最高;肝脏中Cd差异不显著,鲤鱼Zn含量最高,翘嘴鲌Cu含量最高;鱼卵鲤鱼中未检出6种重金属,翘嘴鲌Zn含量最高。2种鱼类中,Zn、Cu、Mn和Cr的含量未超出《食品安全国家标准》的限值。Cd重金属单因子污染指数在2种鱼的不同器官与肌肉组织中,均超过了重污染等级阈值3.0,达重污染水平。 Distribution characteristics of heavy metals in different tissues of wild edible economic fish living in Jinjiang River reflect pollution status and edible safety.Content of six heavy metals,Cu,Pb,Cr,Mn,CD and Zn,in the flesh,liver and eggs were determined by atomic absorption spectrometry(AAS),for wild carp,Culter Alburnus living Jinjiang River,the distribution characteristics of heavy metals were analyzed along with pollution and safety assessment.The results showed that there was not significant on the six heavy metals content in the muscle between the two fishes,but Zn content was the highest;Cd content in the liver was not significant,Zn content in carp was the highest,and Cu content in Culter Alburnus was the highest;the content of Zn in Culter Alburnus was the highest.However,6 heavy metals were not detected in carp roe.The contents of Zn,Cu,Mn and Cr in the two fish species were lower than the National Food Safety Standard.The single factor pollution index of Cd heavy metals in different organs and muscle tissues of two fish species are more than the threshold value of heavy pollution level by 3.0,reaching the level of heavy pollution.
