降胆固醇红曲霉的分离筛选及培养条件研究

摘要 从市售红曲中分离筛选四株红曲霉,通过铁矾显色剂显色法筛选出降解胆固醇能力最强的菌株M2,采用单因子试验进一步探讨该菌株的最佳发酵条件。研究表明:降解胆固醇能力最强的M2菌株的最适宜接种量为8%,发酵的最佳温度为30℃,发酵培养基的初始pH值在4~6之间。 In this study,four strains of Monascus were isolated from commercial Monascus,and the strain M2 with the strongest ability of degrading cholesterol was screened by using chromogenic reagent of iron vitriol.The results showed that the optimum inoculum amount was 8%,the optimum fermentation temperature was 30℃,and the initial pH value of fermentation medium was 4~6.
