摘要
采用热风干燥技术,结合促干剂的使用,可以提高杏的干燥效率,提升杏干的产品品质。研究促干剂质量分数、浸渍处理时间、干燥温度、干燥时间对树上干杏干燥效果的影响,通过单因素试验,以感官评价及水分为考核指标,确定适宜鲜杏干燥的条件和工艺参数。结果表明,促干剂质量分数为2.28%,浸渍时间40 s,干燥温度55℃时,干燥时间32 h时,树上干杏的干燥效果最好,色泽均匀呈黄褐色,口感酸甜。
The drying efficiency of apricot was improved and the quality of dried apricot was improved by using hot air drying technology and the use of drying agent.The effects of drying agent concentration,dipping treatment time,drying temperature and drying time on the drying effect of dried apricot were studied.Through single factor experiments,sensory evaluation and moisture were used as assessment indexes to determine the suitable drying conditions and technological parameters of fresh apricot.The results showed that the concentration of drying agent was 2.28%,the soaking time 40 s,the drying temperature 55℃,and the drying time 32 h,the drying effect of dried apricot on the tree was the best,the color was uniform yellow-brown,and the taste was sour and sweet.
