摘要
甘油二酯是甘油三酯中一个脂肪酸被羟基取代的结构脂质。甘油二酯作为油脂中的微量天然成分,是体内脂肪代谢的内源中间产物,是公认安全的食品成分。按照酰基供体脂肪酸与甘油羟基的结合位置不同,甘油二酯可分为1,3-甘油二酯和1,2(2,3)-甘油二酯。研究发现,甘油二酯,特别是1,3-甘油二酯,在预防体内脂肪堆积、肥胖症等具有重要作用,因而受到了广泛的关注。本文主要介绍了甘油二酯的合成及纯化路线,为甘油二酯的合成提供了参考。
Diacylglycerol(DAG)is a structural lipid which a fatty acid in triacylglycerol is replaced by a hydroxyl group.Diacylglycerols,as trace natural ingredients in fats and oils,are endogenous intermediate products of fat metabolism in the body,and are recognized as safe food ingredients.According to the different binding positions of fatty acids and glycerol hydroxyl groups,diacylglycerols can be divided into 1,3-diacylglycerols(1,3-DAG)and 1,2(2,3)-1,3-diacylglycerols(1,2(2,3)-DAG.It is found that diacylglycerols,especially 1,3-diacylglycerols,have the effects on reducing visceral fat and inhibiting weight gain,and which have attracted widespread attention.The synthetic and purified routes of diacylglycerols were mainly introduced,and it can also be used as a reference for the synthesis of diacylglycerols.
