摘要 近年来频发的食品重金属污染事件引起了公众的关注和担忧,食品中重金属的检测方法也成为食品安全领域的研究热点。目前食品中重金属检测方法所需时间相对较长,其中很大比例的时间被前处理所耗用,因此,持续发展简单快速的前处理技术是提高检测效率的关键环节。目前食品中重金属常用的前处理技术主要有无需消解的直接进样、微波辅助提取、溶剂提取和紫外光解技术。本文综述了近年来食品中重金属检测前处理技术的应用现状,同时还展望了食品中重金属检测所需前处理技术的发展趋势,以期为建立简单快速的前处理方法,提高检测效率提供参考。 In recent years,frequent incidents of heavy metal contamination in food have aroused public concern,and the detection of heavy metals in food has become a hot topic in the field of food safety.At present,the detection of heavy metals in food takes a relatively long time,and a large proportion of the time is consumed by pretreatment.Therefore,the continuous development of simple and rapid pretreatment technology is the key to improve the detection efficiency.At present,the commonly used pretreatment technologies for heavy metals in food mainly include direct sampling without digestion,microwave-assisted extraction,solvent extraction and ultraviolet photo dissociation.In this paper,the application of pretreatment technology for heavy metal detection in food in recent years is reviewed,and the development trend of pretreatment technology for heavy metal detection in food is prospected,so as to provide reference for establishing simple and rapid pretreatment method and improving detection efficiency.
