摘要
马铃薯全粉是一种营养丰富的食品原料,可以改善面制品的营养和品质特性,对马铃薯全粉进行适当改性处理,有助于马铃薯全粉在各类加工食品中的应用。对马铃薯全粉的改性及在食品中的应用研究进行了综述,为马铃薯全粉的生产及综合利用提供参考。
Whole potato powder is a kind of nutritious food raw material,which can improve the nutrition and quality characteristics of pasta products.Proper modification of whole potato powder can help the application of whole potato powder in various processed foods.This paper reviews the modification of potato whole meal and its application in food,and provides a reference for the production and comprehensive utilization of whole potato meal.
