摘要
文章主要采用超滤、凝胶层析对脱脂玉米胚芽粕水解物进行分离,评价玉米胚芽粕水解物及分离所获得的组分的抗氧化活性。结果表明,玉米胚芽粕水解液经超滤分级后,筛选得到分子量<6kDa的组分抗氧化活性较强,进一步采用Sephadex G-15凝胶层析分离,得到G1、G2、G3、G44个抗氧化活性组分,其中G2组分抗氧化活性最强。玉米胚芽粕水解物具有较强的清除超氧阴离子自由基、羟自由基、DPPH·能力、抗油脂氧化能力和还原力。
In this paper,the hydrolysates of defatted corn germ meal are separated by ultrafiltration and gel chromatography,and the antioxidant activity of hydrolysates from corn germ meal and the components obtained are evaluated.The results show that after ultrafiltration of corn germ meal hydrolysate,the components with molecular weight less than 6 kDa have strong antioxidant activity.Sephadex G-15 gel chromatography is further used to separate,four antioxidant active components such as G1,G2,G3 and G4 are obtained,among which,G2 has the strongest antioxidant activity.The hydrolysates of corn germ meal have stronger scavenging ability to superoxide anion radical,hydroxyl radical,DPPH·,oxidation resistance to oils and reducing capability.
