中山市食品产业的竞争力及其创新能力分析 被引量:2

Assessment on the Competitiveness and Innovation Capability of Food Industry in Zhongshan

摘要 以中山市食品产业为研究对象,采用文献调查、问卷调查及实地考察等方法,确定中山市食品产业的现状并分析其整体竞争力和创新能力,梳理中山市食品产业中占据垄断地位或具有优势的环节,挖掘竞争潜力,收集共性创新需求,评估技术水平和创新能力。结果表明:中山市的月饼制造业和调味品具有较强的市场优势,黄圃腊味具有一定的区域优势;中山市80%的食品企业已实现半自动化生产且国产设备占比85%;大多数食品企业具有一定的研发能力,但公共科技服务平台利用程度较低,产学研合作较少,整体协同创新能力不强;产品质量不合格和标签不规范仍是中山市食品不合格的重要原因。因此,加大科技投入、提升食品产业的自动化水平、开展对食品标签、食品安全标准及质量体系等的培训、发展公共服务平台等措施将有助于中山市食品产业的转型升级。 Current situation,competitiveness and innovation capability of food industry in Zhongshan were investigated based on literature research,questionnaire survey and field visit.The competitive industries were identified to explore the potential of food industry.Common demands were collected,and the technical level and innovation capability were evaluated.The results showed that mooncake manufacturing and seasoning industry have attained market superiority,and Huangpu sausage has the regional advantage.Although most food corporations have established the R&D system,the public platforms of technology services were not utilized fully with few university-industry cooperation.A total of 80%food corporations have achieved semiautomatization and 85%facilities were made in China.Disqualification of food labels,and food quality below standard are main factors contribute to the unqualified food in Zhongshan.The suggestion according to upgrading the technical level and innovation capability of Zhongshan food industry including increase of science and technology input,raising the automation level,providing the training on food safety and food label,and development of public platform were proposed,and it would be useful for scientific policy-making of Zhongshan government.
