摘要
近年来,由于海洋污染和赤潮的出现,贝类产品的品质和食用安全面临重大挑战,对海洋经济发展和人民饮食安全构成巨大威胁。为保障人民群众生命健康,各类关于对贝类毒素的检测分析的研究越来越深入,从贝类毒素的分类、贝类毒素作用机理及中毒表现、贝类毒素的高发季节、贝类毒素常用检测方法等方面进行综述,以期为贝类毒素的研究提供参考。
In recent years,due to marine pollution and the emergence of red tides,the quality and food safety of shellfish products face major challenges,which pose a huge threat to the marine economic development and people’s dietary safety.In order to ensure the lives and health,various kinds of research on the detection and analysis of shellfish toxins have been carried out more and more deeply.The classification and detection methods,and high incidence season of shellfish toxin and the mechanism of shellfish toxin action and toxicity are reviewed,in order to provide reference for the study of shellfish toxin.
