右江流域5种野生蔬菜的氨基酸含量及营养价值评价 被引量:5

Amino Acid Composition and Nutritional Evaluation of the 5 Kinds of Wild Vegetables Used in the Youjiang River Basin

摘要 采用柱前衍生rP-HPLC法测定右江流域壮族5种野生蔬菜中游离氨基酸和水解氨基酸的含量,以WHo/FAo氨基酸参考模式为评价标准,对其营养价值开展评价。游离氨基酸检测结果显示,狗肝菜、铜锤玉带草均含有18种游离氨基酸,狗肝菜、铜锤玉带草、鸭儿芹的鲜味和甜味氨酸含量较高,是味道较好的野生蔬菜。水解氨基酸检测结果显示,狗肝菜、鸭儿芹、铜锤玉带草的总氨基酸含量均较高,铜锤玉带草中的天冬氨酸和谷氨酸含量最高;5种野生蔬菜均具有8种人体必需氨基酸,其中鸭儿芹、狗肝菜、铜锤玉带草含量较高,而且药效氨基酸含量丰富。与WHo/FAo推荐标准模式相比,狗肝菜、鸭儿芹、铜锤玉带草和野芋叶柄的必需氨基酸含量配比较为合理。狗肝菜、鸭儿芹、铜锤玉带草属于较优质的蛋白质来源,具有较好的开发前景。 The content of free amino acids and hydrolytic amino acids in the 5 kinds of wild edible vegetables used by Zhuang peoples in the Youjiang river basin was determined by pre-column derivatization RP HPLC,to evaluate the nutritional values of 5 wild vegetables by the the FAO/WHO reference model.The results of free amino acids test showed that there were 18 kinds of free amino acids in Dicliptera chinensis(L.)Juss.and Lobelia angulata Forst,and the contents of delicious and sweet amino acid were richer in Dicliptera chinensis(L.)Juss.,Lobelia angulata Forst and Cryptotaenia japonica Hassk.The results of hydrolysis amino acids test showed that the contents of total amino acids in Dicliptera chinensis(L.)Juss.,Lobelia angulata Forst and Cryptotaenia japonica Hassk were higher,and the contents of aspartic acid and glutamic acid in Lobelia angulata Forst were the highest.All 5 kinds of wild vegetables had 8 essential amino acids,the contents of total essential amino acids and drug amino acids of Dicliptera chinensis(L.)Juss.,Lobelia angulata Forst and Cryptotaenia japonica Hassk were higher.Compared with the FAO/WHO reference model of essential amino acid,the content ratio of essential amino acids in the Dicliptera chinensis(L.)Juss.,Lobelia angulata Forst,Cryptotaenia japonica Hassk and Colocasia gigantea(Blume)Hook.f was relatively reasonable.Dicliptera chinensis(L.)Juss.,Lobelia angulata Forst and Cryptotaenia japonica Hassk belonged to high quality protein sources and had good development prospects.
