摘要
本文介绍了酱香型白酒“腰线”的种类,从微生物生长代谢角度分析了“腰线”的形成原因,进一步概述了“腰线”对堆积发酵的影响,并提出了针对不同类型“腰线”的应对处理措施。
In this article we introduced the kinds of“waist line”in the fermented grains of Jiangxiang Baijiu,and analyzed the causes of the formation of“waist line”from the perspective of microbial growth and metabolism.We further summarized the influence of“waist line”on the stacking fermentation process.Finally,we proposed some countermeasures to deal with different kinds of“waist line”.
