竹篓溶氧器在酱香酒堆积发酵中的应用

摘要 堆积发酵工序是酱香型白酒生产独具特色的生产工艺之一,能进一步网罗环境中微生物,同时产生大量香味物质,赋予酱香白酒特殊的风格特征。但一次酒和二次酒生产气温较低,糖化堆发酵缓慢,堆积时间过长,易生酸,堆子中温差,生香差。本文试制一种竹篓溶氧器应用于堆积发酵,以期为解决此类问题提供参考。 Stacking fermentation is one of the unique production processes of Jiangxiang Baijiu,during which microorganisms in the environment are trapped,and flavoring substances are produced,thus endowing the liquor with special style.However,during the first and second production cycle,the environment temperature is usually low,the fermentation in the saccharification stack is slow,and the stacking time is long,which would result in excessive acid in the stack,low temperature at the center of the stack,and low flavoring substances yield.In this paper,a kind of bamboo basket for increasing dissolved oxygen in the stack was developed and applied to the stacking fermentation process,so as to provide reference for solving such problems.
