摘要
膜分离技术的应用使乳品行业发生了革命性的变化。不同类型的膜在乳品工业中用于不同的目的,如运用微滤除菌生产延长了保质期的牛奶,利用小孔径微滤膜在奶酪生产中分离酪蛋白和乳清蛋白;将超滤或反渗透用于牛奶浓缩、乳品成分分离和纯化,可得到天然状态的牛乳蛋白。本文综述了膜分离技术的原理及其在乳品加工中的应用,并就其应用前景进行了展望。
The application of membrane separation technology has revolutionized the dairy industry.Different types of membranes are used for different purposes in dairy industry,such as producing milk with extended shelf life by microfiltration;separating casein and whey protein in cheese production with small pore size microfiltration membrane;milk protein in natural state can be obtained by ultrafiltration or reverse osmosis for milk concentration,separation and purification of dairy components.In this paper,the principle of membrane separation technology and its application in dairy processing were reviewed,and its application prospect was prospected.
