苗家(原生态)香草酒酒曲安全指标及特征成分分析研究

摘要 本文通过对苗家(原生态)香草酒酒曲的安全指标、特征成分进行检测分析,并与市售的4种酒曲进行对比分析。结果表明,苗家原生态香草酒酒曲安全指标均符合国家相关安全标准要求,且远低于国家安全标准的安全限量;糖化力、试饭酸度及酵母细胞数检测数据分析也达到了理想效果,为苗家(原生态)香草酒酒曲的品质和风格研究奠定了基础,也为制定苗家(原生态)香草酒酒曲的产品标准提供了理论依据。 The research of this subject is mainly to detect and analyze the safety index and characteristic components of Miao family(original)vanilla wine koji,and compare and analyze four kinds of koji in the market.The results show that the safety indexes of Miao original vanilla wine koji meet the requirements of relevant national safety standards,and are far below the safety limit of national safety standards;There are also several characteristic components,such as saccharification power,acidity of test rice and number of yeast cells,which also achieve ideal results.The results of this analysis laid a foundation for the study of the quality and style of Miao family(original ecological)vanilla wine koji,and also provided a theoretical basis for formulating the product standard of Miao family(original ecological)vanilla wine koji.
