摘要
比较2种不同栽培架式对和田红葡萄果实品质和酿造品质,为和田红葡萄选择合理的栽培架式和栽培措施提供理论依据进而提高酿造品质。以新疆塔里木盆地北缘阿瓦提县5年生和田红葡萄为试材,采用座东朝西和座西朝东2种架式,进行摘心和不摘心处理,果实成熟后分析果实在外观品质、内部品质及酿造慕萨莱斯酒的理化性质的不同之处。结果表明,2种栽培架式的和田红葡萄果实外观品质除果粒大小和果皮质量以外,其他各指标无显著影响;内部品质pH值、总糖、总酸、花色苷、总类黄酮、果实内含物差异显著。进一步分析感官品质和理化性质认为坐东朝西架式A架式酿造的慕萨莱思小样酒总糖和澄清度高,总酸含量低,口感品质好。在塔里木盆地北缘的阿瓦提县,相比坐西朝东架式架式,坐东朝西架式架式果实品质更优,酿造的慕萨莱思酒口感佳,可推动阿瓦提县和田红葡萄生产和慕萨莱思产业的发展。
Comparing the two different cultivation patterns to the fruit quality and brewing quality of'Red Khotan'grapes,it provides a theoretical basis for choosing reasonable cultivation trellis and cultivation measures of'Red Khotan'grapes to improve the brewing quality.Using 5-year-old'Red Khotan'grapes from Awati County in the northern margin of the Tarim Basin in Xinjiang as the test materials,two types of trellis were used:East-West and West-East.The difference between appearance quality,internal quality and the physical and chemical properties of brewing Msalais were studied.Results showed that the appearance quality of'Red Khotan'grapes with two cultivation racks had no significant effect except the size of the fruit and the quality of the peel;internal quality pH,total sugar,total acid,anthocyanin,total flavonoids,fruit contents differred significantly.Further analysis of sensory quality and physicochemical properties suggested that the Musalaisi sample wine brewed in the east-western style was high in total sugar and clarity,with low total acid content and good taste quality.In Awati County on the northern edge of the Tarim Basin,A-trellis fruits had better quality than B-trellis,and the brewed Msalais wine had a good taste,which could promote the production and development of the sales industry.
