南极磷虾热风干燥工艺对油脂品质的影响 被引量:4

摘要 以南极磷虾为原料,经干燥后提取虾油,以酸价、碘价、过氧化值为指标研究加热温度、风速、堆叠厚度、物料粉碎程度对南极磷虾油品质的影响。在单因素的基础上,通过正交试验设计优化干燥工艺参数,得出干燥工艺条件为:温度85℃,风速1.5 m/s,堆叠厚度2层(1.0 cm),粉碎程度4段。在该条件下,得到的南极磷虾油酸价9.4 mg/g,碘价110 g/hg,且过氧化值极低,虾油品质较高。 The effects of heating temperature,wind speed,stacking thickness and material crushing degree on the quality of Antarctic krill oil were studied with acid value,iodine value and peroxide value as indexes.On the basis of single factor,the drying process parameters were optimized by orthogonal experimental design.The drying conditions were as follows:temperature of 85℃,wind speed of 1.5 m/s,stack thickness of 2 layers(1.0 cm),crushing degree of 4 segments.Under these conditions,the oleic acid value of Antarctic krill is 9.4 mg/g,the iodine value is 110 g/hg,the peroxide value is very low,and the quality of oil is high.
