旅游语境下的民间小吃文化开发策略研究——以崇州“怀远三绝”为例

摘要 “怀远三绝”由“叶儿耙”、“冻糕”、“豆腐帘子”组成,是崇州怀远古镇民间小吃的典型代表。随着现代社会的发展和旅游市场的需要,“怀远三绝”不仅承续着作为当地民众日常生活的食物,还衍生为一种文化资源裹挟于时代的发展中,成为政府、市场、民间为之意趣互动的保护与开发对象。“怀远三绝”作为四川省非物质文化遗产,虽然担负起饮食文化旅游的新形象,以此来促进地方经济的发展。但是在旅游市场化开发中缺乏民间小吃的整合性、文化资源开发不够深、产品较为单一、品牌宣传力度不够等问题。对此,论文提出相应的解决办法。 "Three unique snacks of Huaiyuanis composed of"Pancake wrapped in pomelo leave","Steamed cake","Tofu lianzi",which is the typical representative of folk snacks in Huaiyuan ancient town of Chongzhou.With the development of modern society and the needs of tourism market,the"three unique snacks of Huaiyuan"is not only inberited food as the daily life of local people,but also derived as a kind of cultural resources bound in the development of The Times.It has also become the object of protection and development for the interaction between the government,the market and the people.As the intangible cultural heritage of Sichuan province,"three unique snacks of Huaiyuan"bears the new image of food culture tourism to promote the development of local economy.However,in the market oriented development of tourism,the intecgration of folk snacks is not enough,the development of cultural resources is not deep enough,the product is relatively single,the brand publicity is not enough.To this,the paper puts forward the corresponding solutions.
