摘要
近年来茶产业由单一的产业结构逐渐向综合利用、精加工、高附加值和可持续的方向发展,超微茶粉生产已成为茶叶深加工的重要领域之一,研究其深加工和综合利用具有十分重要意义。文章介绍了茶粉、超微茶粉和抹茶的概念,综述了茶粉近年来研究概况、超微茶粉在食品中的应用以及对食品品质的影响,展望了超微茶粉食品产业发展的研究方向,旨在为超微茶粉的综合开发利用提供参考。
In recent years,the tea industry has gradually developed from a single industrial structure to comprehensive utilization,precision processing,high added value and sustainability.The production of ultramicro tea powder has become one of the important fields of tea deep processing.This article introduces the concepts of tea powder,ultrafine tea powder and matcha tea,summarizes the research overview of tea powder in recent years,the application of ultrafine tea powder in food and its impact on food quality,and looks forward to the research on the development of ultrafine tea powder.The direction aims to provide a reference for the comprehensive development and utilization of ultramicro tea powder.
