摘要 γ-聚谷氨酸是一种绿色环保型高分子聚合材料,具有良好的吸附性、保水性和生物相容性,可以被生物体完全降解,作为生物絮凝剂、肥料增效剂、保湿剂、药物载体、食品添加剂等应用于农业生产、医药、化妆品、环保和食品等众多领域,引起了国内外学者的广泛关注。对γ-聚谷氨酸的结构性质、制备方法、提取和应用方面进行综述,重点论述了微生物发酵法生产γ-聚谷氨酸和γ-聚谷氨酸的应用;最后,基于γ-聚谷氨酸的研究进展和应用,对γ-聚谷氨酸制备中现存问题和未来发展方向进行展望。 γ-polyglutamic acid is a kind of environmental friendly polymer material,which has good adsorption,water retention and bio-compatibility,and can be completely degraded by organisms.As bio-flocculant,fertilizer synergist,humectant,drug carrier and food additive,γ-polyglutamic acid has been widely used in many fields such as agricultural production,medicine,cosmetics,environmental protection and food.The structural properties,preparation methods,extraction and application ofγ-polyglutamic acid were reviewed,and the application ofγ-polyglutamic acid produced by microbial fermentation andγ-polyglutamic acid was mainly discussed.Finally,based on the research progress and application ofγ-polyglutamic acid,the existing problems and future development direction in the preparation ofγ-polyglutamic acid were prospected.
